LENTIL STEW
1. Sauté onion, garlic, carrots, potatoes, and leeks in a large pot.
2. Add sea salt and pepper to taste.
3. Add one cup of wild rice, one cup of lentils - cover with water & simmer until lentils and rice are
almost completely cooked.
4. Add one can of tomato paste.
5. Add oregano and basil to taste.
6. Add spinach, frozen corn, other veggies to taste.
7. Simmer another 30 minutes or so to allow flavors to emerge; freeze leftovers for future meals.
